Crock Pot Taco Chicken

Another ridiculously easy meal - that takes about 5 minutes to throw together and will cook up seriously yummy while you are away.
Are you ready for the ingredients:
Chicken Breast - I throw in 3 or 4, probably about 1lb, maybe a little more.
1 Can Rotel in whatever spice level you desire
1 Package taco seasoning mix
1 Can of water (or maybe a half - just so that the chicken is covered)
Put the chicken breasts in the crockpot. Pour the taco seasoning on top of them. Add the rotel and then add a can of water.
Cook on low for 6 to 8 hours. About an hour before I am going to serve, I shred the chicken and then throw back in the pot. Chicken will shred easily.
Now, what can you do with the chicken? There are lots of possibilities.
Tonight, we used them in tostadas! Spread the tostada will refried black beans, add the chicken, lettuce, tomatoes, onions, and cheese!

Other options ... tacos, quesadillas or chicken nachos! For busy nights, we buy the pre-shredded lettuce and I cut up tomatoes and onions the night before, so the toppings are ready to go.
