Chocolatey Yogurt Cake
If you want to see an amazingly hilarious face, give a four year old a spoonful of plain Greek yogurt. Seriously. Hilarious.
I'm not sure why, but sour cream really makes me gag. Maybe the name? The smell? Ugh. In college I started using plain yogurt in place of sour cream for foods that needed a topping, such as baked potatoes or nachos. Plain yogurt worked perfectly fine as a substitute, but Greek yogurt is even better. I never would have thought to use Greek yogurt in a cake recipe, but luckily Hungry Girl did just that.
For our second 2 ingredient cake, I used Devils Food cake mix and Greek yogurt. Combine the cake mix with 1 cup of yogurt and 1 cup of water. Whisk together to combine. Bake according to package directions. Again, I made cupcakes and an 8" cake in order to compare.
The batter came together very easily and reminded me of a mousse or a bit like melted marshmallows.
I was surprised when I pulled them from the oven by how much the batter had expanded. The cupcakes were super high...even higher than usual. I had expected more of a compact cupcake because I assumed the weight of the yogurt would prevent a full rise. You know what they say about assumptions..
I had leftover yogurt so I mixed it with powdered sugar to make a glaze. Tasty.
Overall, the cake and cupcakes were super good. Very very moist and rich. My husband said he preferred them to the regular boxed mix treats. He said they tasted homemade and The Princess said that they tasted "yum."
These will be made over and over in our house. I highly recommend.

2 Ingredient Cake: Pie Filling

This one has been all over Pinterest ... a box of angel food cake and a can of pie filling.
Simple, right?
Simple ... but weird, right?
I couldn't imagine how pie filling would be in any way liquid enough to make a good cake. And I thought it would be way to heavy to make a light cake like angel food. So, try it, I must!
Here are your ingredients:
Mix them up lightly in a large mixing bowl:
Apparently, it does get cake mix like.
Put it into your pan. I used this new pan I got on clearance after Easter to make mini cakes. Because we all know mini is better! Make sure not to fill any more than half way. These rise like crazy!
Bake per your package directions and remove from oven and allow to cool.
Now, I ran into a problem. Getting them out of this crazy pan. I smooshed the heck out of them.
Yeah, not a pretty sight. But they tasted good.

Hmm, strawberries, whipped cream and chocolate make everything better, right?

2 Ingredient Cake: Pumpkin!

When I was pregnant with my first baby I craved canned pumpkin. The only way I had ever had canned pumpkin prior to pregnancy was as an ingredient in pumpkin pie. I had never tasted plain canned pumpkin...but I had to have it.
I ate it plain, mixed it with yogurt, added it to my oatmeal. I had hoped that because she was fed so much pumpkin while in my belly that The Princess would be a big fan. And she is! She loves it. Of course you have to mix it with a box of chocolate cake mix first...
A can of pumpkin (plain, not the pumpkin pie filling) mixed with a box of devils food cake mix produces a fudgey chewy dense cake. I don't know how else to describe it. I generally make the recipe in mini cupcake form because children really seem to enjoy them and they are pretty rich. I had first found the recipe for the Yum Yum Brownie Muffins recipe on the Hungry Girls website. Since then there have been further cake combination recommendations including spice cake mix. The first time I made the Yum Yum Brownie Muffins, I had thought that spice cake would probably work very well, so today we are going to try it out.
The ingredients are simple:
I box spice cake mix
1 can 100% pure pumpkin
Mix ingredients until well combined and smooth. The batter is very thick and sticky.
Once you spoon into greased cake pans you will need to spread out with a spatula. Bake according to cake mix instructions. I made 6 cupcakes and an 8" cake. The tops of the cupcakes will seem hard before the inside is cooked through. You will definitely need to do the toothpick test on these treats.
As with all spice cakes the kitchen smelled wonderful while they are baking. Just so warm and comforting. Not really appropriate for 93 degree weather...whatever.
The pumpkin flavor really comes through in these cakes. Actually, they tastes like a pumpkin roll cake I've had in the past. (With the pumpkin/devils food combination, there isn't a pumpkin cake flavor.). Very good texture and good moisture level. Husband said wayyyy better than normal boxed spice cake. The Princess said it tasted punkiny and continued to shovel it into her mouth. I feel much better about adding a can of pumpkin instead of oil and eggs...
It's basically health food.

All week we will be featuring 2 ingredient cakes ... because, ya know, everyone should be eating more cake!

So, you know how when you make a cake out of a box and top it with canned frosting, you feel like the best mom EVER?
But then you start to doubt yourself.
Your child looks like she's lacking energy and you just don't feel like you've used enough chemicals in her diet. If only there were a way to make dessert with more caffeine and artificial sweeteners.
Well, Hungry Girl has found a way to make all of your dreams come true!!!!
Continuing in our 2 ingredient cake series this recipe uses a box of cake mix and a can of diet soda. There are several examples like yellow cake mix and cream soda or lemon cake with lemon-lime soda. I think strawberry cake with strawberry soda would be good too, and no caffeine either. I chose Devils Food cake mix and Diet Cherry Pepsi because I had both on hand. The "hungry girl" site focuses on low call high volume foods which is why she uses diet soda, but regular soda would work just as well.

Preheat oven to 350 degrees. Whisk together ingredients in bowl and the pour or spoon into prepared pans. I made 6 cupcakes and an 8 inch cake in order to test both. The batter,of course, was very foamy until all of the bubbles were incorporated into the mix.
The batter at this point is much runnier than batter prepared according to box directions.
I found that I had to cook the cakes longer than normal. The cakes are very shiny and pretty and springy to the touch.
However, The Princess only took two bites and said it didn't taste good. The husband said it was fine , but that regular boxed cake mix was better. Also, the cake texture is a little different and a bit sticky. Not really a success if your family is on a normal diet. However...if calories are a concern, this is a really good idea and obviously you could play around with flavors. Maybe caffeine free Diet Dr. Pepper....
