Who doesn't love a muffin? 

Especially one chocked full of veggies that your kids will willingly eat!

This recipe came from allrecipes.com, but with a decent amount of changes. 

1 1/2 cups all-purpose flour
3/4 cup whole wheat flour
3/4 cup oats (I use old fashioned)
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon baking powder
2 1/2 teaspoons cinnamon
1/4 teaspoon nutmeg
3 eggs
1/4 cup vegetable oil
1/2 cup unsweetened applesauce
1 cup plain or vanilla flavored yogurt
1/2 cup white sugar
1/3 cup honey
2 teaspoons vanilla extract
1 cup shredded zucchini (drained)
1 cup shredded carrots

Preheat oven to 400 degrees.

In a medium size bowl, sift together the first 8 ingredients. In a separate, large, bowl, beat together eggs, vegetable oil, applesauce, yogurt, sugar, honey, and vanilla. Mix the flour mixture into the egg mixture. Fold in the zucchini, carrots.  Do not over mix.

Scoop into lightly greased muffin pans.

Bake for aprox 18 minutes or until toothpick comes out clean.  This recipe makes 24 muffins.

After cooled, these freeze nicely.
